Agashi- Virar special dish, Poha Chicken Bhujing is indeed a unique and flavorful dish. It combines grilled marinated chicken, sliced potatoes with flattened rice (poha), creating a distinctive fusion of textures and tastes. The marinated chicken and potatoes adds a savory and aromatic element, while the poha provides a light and slightly crispy contrast. This dish is a great example of how local ingredients and cooking techniques can come together to create something truly special dish. If you get a chance to try it when you are in Virar, it’s definitely worth tasting!
At The Masala Bazaar, we have created this special blend for making Poha- Chicken bhujing. If you are vegetarian, you can try using boiled Soya chunks instead of chicken.
Poha Bhujing Spice Blend pack has two packs. Pack 1 is for marination and other has main spice mixture.
To prepare this local cuisine, follow these steps:
   – Slice 3 potatoes with skin into thick round shapes.
   – Take 500 grams of chicken pieces (with or without bones, depending on your preference).
   – In a bowl, mix the chicken with 1 tablespoon of ginger-garlic paste & add the spice powder from Packet 1. Add salt in case required. Marinate.
  – After marinating the chicken and potatoes with the spice mix for an hour, grill or tandoor or use gas to grill.
     – Place the chicken and potato slices on the grill grates or place skewers with chicken and potatoes on the gas.
     – Grill the chicken and potatoes, turning occasionally, until they are well-cooked and have a nice char. This typically takes about 15-20 minutes, depending on the size of the pieces and the heat level.
Step 2:
– Take heavy bottom pan and heat oil. Add 3 medium size sliced onions to it. On medium flame, fry till translucent. Add spice mixture from Packet 2. Stir well. Cover with lid for about 5- 10 mins.
– Add grilled chicken and potatoes. Mix well with little water and cover & cook until the chicken is tender and the potatoes are cooked through.
– Add one bowl of thick poha (flattened rice) to it. Mix well. Sprinkle some water. On medium flame, cover with lid for 5-10 mins. Your poha chicken bhujing is ready.
   – Adjust seasoning if needed and garnish with chopped coriander if desired and serve hot with lemon slice.
You can add little more spice in case you want to make it spicy. This method should give you a flavorful and hearty dish.
